The origin of the two spellings is this: Matthew is for those who are Catholic. Mathew is for those who are Protestant. It was a way to identify your faith. The spelling now is inconsequential as many have forgotten, or have been ignorant of the origin, however if you were to travel to a predominately protestant city and whip out a credit card with 'Matthew' you'll get some strange looks, given the protestant passion of their faith.
